Homemade Noodles

When big girl was sick last week, she wanted Chicken Noodle Soup. Since I never keep any on hand for emergencies such as this, I was forced to improvise...

Homemade Noodles
1 c flour
1/4 t baking powder
1/2 t salt
1 egg
2 T milk (approx)
Stir together flour, baking powder, and salt. Create well in flour, add egg and milk. Stir with fork, gradually incorporating all of flour mixture. Add a little more milk if necessary - should be firm. Form like a puck, wrap in plastic wrap for 10 minutes or so. Roll on counter to about 9 x 13, using plenty of flour so dough doesn't stick. Using a very sharp knife, cut in ribbons. Allow to dry for a few minutes, then drop in boiling water. Will only take 3 ish minutes to cook.

Luckily, we'd had turkey the night before and my Mom had left the leftovers. So I diced up a couple carrots, two ribs of celery and a little onion. Made "broth" with bouillon and dumped the veggies in the boiling water with a cup or so of the turkey chopped up. When the veggies were nice and tender, I dropped the noodles in for about 5 minutes. Viola! Happy sick girl.
